Pasta Primavera

This is a healthy dish loaded with lots of vegetables so of course I didn't like it. Rarely do we cook without meat but this was a nice change.
Pasta Primavera
Ingredients
12 oz. penne
2 Tbsp oil
1 tsp min garlic
1 1/2 tsp dried basil
1/4 tsp black pepper
3 bell peppers-green, red & yellow- cut into strips
8 oz sliced mushrooms
14 oz. can diced tomatoes, undrained 
1/4 cup shredded parmesan cheese

Cook pasta by package directions; drain and set aside
In large skillet on medium high, heat oil
Add onion and garlic & cook for 1 minute
Add pepper strips & mushrooms, cook for 2 minutes 
Add undrained tomatoes, basil and black pepper
Bring to boil then reduce to simmer for 5 minutes
Toss vegetable mix with pasta & parmesan cheese

White BBQ Chicken

A dish with an interesting play on barbecue sauce. This was a great meal and tastes a lot better than it looks :) I thought the amount of pepper was going to be strong but the sugar really balanced it out. 
White BBQ Chicken
Ingredients
1.5 lbs. boneless chicken breast or thighs

Sauce:
2 cups mayonnaise
1 1/2 tsp salt
1 Tbsp coarsely ground pepper
3 tsp sugar
6 Tbsp vinegar

Slice chicken into serving pieces.
Combine sauce ingredients and pour over chicken in greased baking dish.
Cover, bake @ 350 for 45 minutes

Cool Summer Pasta Salad

This pasta salad is a great dish for a quick lunch/dinner or to bring to a potluck. It is easy to make and incredibly tasty.

Pasta Salad

Ingredients
4 cups cooked pasta
8 oz cooked ham pieces
4 oz cheddar cheese, cubed (we used sharp cheddar)
1 cup frozen green peas, thawed
3 carrots- peeled, julienned, & lightly steamed
2 green onions sliced

Dressing: 
3/4 cup mayonnaise
1tsp sugar
2 Tbsp balsamic vinegar
1 Tbsp Dijon
1/2 tsp minced garlic
1/4 tsp pepper

Combine first 6 ingredients in large bowl.
In small second bowl, stir together dressing. 
Pour dressing over salad items & toss to coat.
Refrigerate 1 hour & serve chilled.
